My grandma made delicious empanadas and pies with the fruits—apple, apricot, peach, and membrillo (quince)—picked from trees in the backyard. When she had leftover dough, she would make an open-faced pie, with all the beautiful fruit exposed on the top. I now wonder if she was trying not to be wasteful or if she knew there was such a thing as a galette. The term galette is French for a free-formed tart. I love that this dessert is rustic, so it does not have to look perfect. I
