Mexican Sprinkle Cookies

These popular cookies are called galletas de grageas for their topping of small, round sprinkles in assorted colors. Grageas means “sprinkles,” or, more specifically, the tiny, round rainbow sprinkles known as nonpareils, and I especially like using these decorations at Easter time because they remind me of the colorful confetti in cascarones.
