I like nearly every guacamole. The only ones I don’t like are the commercial ones that contain artificial stuff and are full of tangy preservatives. If guacamole is made with perfectly ripe Hass avocados from Mexico, sign me up. This simple and unique guacamole is jeweled with ruby-red pomegranate seeds.
Halve and pit the avocados, then scoop the flesh from the skin into a bowl. Using a fork, mash the avocado flesh, leaving it a bit chunky.
Add the onions, jalapeño (if using), cilantro, and salt to the bowl, then sprinkle 1 tablespoon of the lime juice over all the ingredients. Give everything a good stir, but don’t overdo it. Taste and adjust the seasoning with salt and more lime juice
