Gorditas de Picadillo

In most of Mexico, gorditas are corn pockets, similar to a pita or arepa, made from masa harina (corn flour) and shaped like a tortilla but thicker. (In northern Mexico, they are made from wheat flour.) Our family’s secret ingredient is the addition of mashed potato to the corn dough. Crisp on the outside and soft on the inside, these tasty pockets can be filled with almost anything you have on hand. In El Paso, the most common filling at fiestas or bazaars is picadillo
