In most of Mexico, gorditas are corn pockets, similar to a pita or arepa, made from masa harina (corn flour) and shaped like a tortilla but thicker. (In northern Mexico, they are made from wheat flour.) Our family’s secret ingredient is the addition of mashed potato to the corn dough.
