Chiles en Nogada

I was first introduced to chiles en nogada when I saw the movie Like Water for Chocolate. The film is about love, tradition, passion, communication, and food. At the end, Tita and Chencha are busy preparing the ingredients—roasting chiles, soaking and shelling walnuts, breaking open pomegranates—for this classic dish of roasted poblanos stuffed with a mixture of meat and fruit and topped with a creamy nut sauce.

I did not grow up eating chiles en nogada, which o
