This agua fresca, which looks like a beautiful summer tea, has an exotic sweet and tangy flavor. Tamarind pods can be found in most Latin supermarkets and some Asian markets. If you don’t have a source near you, look for the pods online.

Ingredients

  • 15 tamarind pods
  • 8 cups (1.9 l) water, plus more if needed

Method

Remove and discard the hard outer shell from each tamarind pod. Some skins may stick, and that is okay.

In a saucepan over high heat, combine the tamarind and 4 cups (950 ml) of the water, bring to a boil, and boil for 2 minutes. As the tamarind boils, mash it with a potato masher, then remove from the heat, cover, and let steep for about 30 minutes.
