Make this traditional pumpkin dish as a side or a dessert. I have included it here in the Halloween section, but it is also a great addition to the Día de los Muertos or Thanksgiving table. If you can’t find pumpkin, butternut squash is a good substitute.
Rinse off the exterior of the pumpkin in cool or warm water, then, using a large serrated knife, cut the pumpkin in half through the stem end. Using a spoon, scoop out the pumpkin seeds and the stringy pulp layer. Discard the seeds (or save for roasting; see Cook’s Note) and pulp.
