Biscochos are popular Christmas cookies in El Paso. In New Mexico, they are known as both bizcochitos and Native American Pueblo Feast Day cookies. In Mexico, they are called hojarascas or pan de polvo. Hojarascas is Spanish for “fallen leaves,” and the cookies are so named because the crunch of stepping on dry leaves is thought to be similar to the sound you hear when you take a bite of a shortbread-like biscocho.
