A popular offering in Mexican panaderías (bakeries), these tricolor shortbread cookies, which are known as polvorones, payasos, or galletas, are tender and lightly crunchy. They are traditionally pink, chocolate, and yellow, but I have made them red, white, and green for Christmas. The dough is the same dough I use for the Mexican Sprinkle Cookies.
