  • 3 medium eggplants

Directions

  1. Preheat the oven to 385°F (195°C).
  2. Wash the vegetables and peel the potatoes.
  3. Chop the zucchinis, eggplants, potatoes, and onions into ½-inch wedges. While cutting the vegetables, toss them straightaway into a large mixing bowl filled with water for 5 to 10 minutes, so they don’t discolor.
