When I get old and lose my teeth, I’ll be comforted by the fact that I won’t have to chew my hirino fricassee, as the pork in this meal just melts in your mouth. The sour and bitter taste of the lettuce and curly endive create a perfect yin and yang with the pork. There is no other dish with complementary flavors like pork fricassée. Oh yeah—the egg-lemon sauce rounds out this winning formula!
