Diples is the Greek word for “fold.” Originating from Peloponnese (where my family is from), the dough is easy to prepare but difficult to fry. Offered up during big events—weddings, baptisms, moving into a house, opening up a business, New Year’s celebrations, etc.—it’s common for Greek ladies to work together to make massive batches, numbering in the hundreds or thousands.
