These are the opposite of conventional, inflated puris. They are flat, hard, and crisp. While the puri dough is resting, you can (1) make the sev mixture; (2) boil 4 to 6 waxy potatoes (reds or Yellow Finns) in salted water with 1 teaspoon turmeric, which will make them an attractive yellow; and (3) make the two chutneys.
