  • 1 walnut-size piece dried tamarind
  • ½ to ¾ cup (or more) boiling water
  • 25 pitted dates

Method

  • To extract the tamarind pulp, cover the piece of dried tamarind with the boiling water and leave for at least an hour. Rub the softened tamarind through a sieve, covering the residue with more boiling water and pressing it through again, and perhaps even a third time.
  • Mix the strained tamarind pulp with the dates, turmeric, fresh coriander, chiles, and salt in a ble
