Tomato And Ginger Infusion

This soup was inspired by my aunt Mani’s wonderful Tomato and Orange Drink. Tomato soup in Indian hands takes on a whole new meaning. Like the other single-vegetable soup in this section, this tomato-ginger infusion steps lightly but provocatively into the meal, and like the carrot soup, it lends itself to being served at any temperature the season and menu suggest. At room temperature, all the flavors get equal attention.
