We made this fabulous barbecue for a Chez Panisse Parsi New Year’s dinner, using kid provided by a wonderful woman near Sacramento who moved to California from Hawaii with a planeload of her animals. You’ll be able to find goat’s meat at any halal butcher anywhere in the United States; kid is a little harder to find.
