Anyone who’s the slightest bit squeamish about chicken livers will be easily seduced by aleti paleti. In the following recipe, timing and technique have been changed to fit our preferences, but the taste is absolutely authentic. Aleti paleti is often a combination of hearts, gizzards, and livers, but I prefer the texture of a single-part dish.
