Indian regional cuisines nearly all have a recipe for cooking potatoes and onions together. This Parsi version is adopted from the Hindu vegetarian cooking of Gujarat. The recipe is rather loose; the amounts of potato and onion can be pushed this way or that depending on the effect you want. In fact, you can leave out the potatoes altogether and have an onion dish.
