The secret to this Parsi beet salad is one of our hidden favorite seasonings, Worcestershire sauce—often overused, but in this salad, a lively addition of pungency and sweetness. The beets can be boiled, steamed, or baked. Served in my mother’s house, this salad had a ring of Romaine-type lettuce standing all round it. You can lightly dress greens of your choice and mound the dressed beets in the middle.
