Cabbage is a great boon in hot climates, where lettuces wilt if they make it to a market at all. Cabbage salad was one of my early favorites. The version I had at boarding school was something akin to coleslaw, with a cooked flour-and-vinegar dressing. At home, it was usually dressed with lime, salt, and chiles. Here, we often add a little olive oil.
