I first tasted this combination at my friend Gool’s house, where her mother served it to us for lunch when we came back from college. It is a salad you can make only in winter, when pomelos come into season. Grapefruit would seem to be the logical substitute, but it doesn’t work as well. Pomelos (accent on the first syllable) look exactly like giant grapefruit, but they have a character and internal structure all their own, not at all uniform.
