Crisp Cashew Wafers

Every luxury hotel in Bombay seems to have a patisserie turning out éclairs and such, but the great pastry treasures of Bombay come from tucked-away places like the Paris Bakery on Dookar Galli (Pork Alley). Legend says that the present owner’s grandfather, an Irani, thought he was opening the Parsi Bakery, but the sign painter got it wrong and it came out as Paris. Not so, says the owner; it was the Paris Bakery from the start. One of my favorites there is the kaju makrum, cashew ma
