Citrus ices are knockouts for color and flavor. Don’t even think of making them with anything but freshly squeezed juice. It takes less time than mixing up a concentrate.
If you have the time, serve citrus ices with segments of the fruit they’re made from. For even finer embroidery, use a little tangle of strands of citrus peel poached in heavy syrup.
