Wherever you go in India, you’ll find limbu pani, a freshly made drink of limes and water. In the north, they often drink limbu pani unsweetened, with salt, but in Bombay it’s usually sweetened with sugar or syrup. There’s nothing particularly Parsi about either this drink or the next, except that they go so well with or before our food. Limes vary so much in size, acidity, and juiciness that it’s simply not possible to be precise about quantities. You have to taste. Mexican h
