Heat an empty pan on medium-high heat for 5 minutes. While heating pot, cut peeled and cored apples into equal size pieces, about 1 inch (2 cm). Add apples, water, sugar, and vanilla to heated pot. Cover and reduce heat and cook for 20–25 minutes, until apples become soft. Remove from heat and use a wooden spoon or fork to crush apples about 3–5 minutes, or until they reach desired consistency—it should be chunky if using to make an Apple Tarte or can be made smoother and prepared as a Yogurt Parfait by using an immersion blender.
