This salad is great for a picnic or as a side dish. The combination of shallots and cucumbers with a light dressing of crème fraîche and lemon is refreshing and allows the crispness of seasonal cucumbers to shine.


  • ¾ cup (180 mL) crème fraîche
  • 2 shallots, diced
  • Juice from one lemon
  • 2 tablespoons chopped chives
  • 2 large cucumbers, peeled and thinly sliced
  • Salt
  • Freshly ground black pepper



In a salad bowl, stir together crème fraîche, shallots, lemon juice, and chives until combined. Add cucumbers and toss until coated in crème fraîche dressing. Add salt and freshly ground pepper to taste. Serve immediately or keep in the refrigerator, covered, before serving.
