This vinaigrette can be made with any vinegar—I particularly enjoy walnut-infused vinegar—and olive oil. The shallots are optional, but add a nice touch when making a simple lettuce and vinaigrette side salad. This will make enough for one medium-sized head of lettuce; increase ingredients proportionally for larger salads.

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 2 tablespoons

Pour 1 tablespoon vinegar into a large salad bowl. Add salt and whisk together. Continue whisking while slowly adding oil. Add shallots and stir to combine. Add salad to the bowl and toss.
