Shrubs, also known as drinking vinegars, are a great way to preserve summer fruits, especially berries. Soaking blueberries in vinegar results in a sharp syrup that is great in cocktails and nonalcoholic beverages, too!
Mix together blueberries, sugar, and lemon zest in a sealable jar and store in fridge for at least 24 hours, shaking occasionally. After 24 hours, strain juice off the berries, getting as much liquid as possible. Mix blueberry and lemon juice with apple cider vinegar in a sealable container.
