This recipe comes from my friend Emma Bentley, who runs a series of Burnt Food supper clubs in the 18th arrondissement. An extension of her blog, Burnt Cream, the Burnt Food (and their boozy Burnt Wine counterparts) are a great way to meet people in Paris while enjoying a home-cooked meal and discovering exciting wines and creative cocktails. Emma shared her technique for making this classic French dish, which we later enjoyed on her amazing sun-soaked balcony.
