A great way to use up a baguette before it goes bad, and indispensable for accompaniments to Fish Soup or French Onion Soup, these croutons can be easily made while preparing your meal—just keep an eye on them at the end, as they can go from golden to charred in the blink of an eye!


  • 1 baguette, cut into about ¼-inch (1 cm) slices
  • 2–3 tablespoons extra virgin olive oil



Preheat oven to 400°F (200°C). Spread baguette slices in one layer on a baking dish. Brush each slice lightly with olive oil, evenly coating each slice. Place baking dish on the middle rack in the oven and bake for 8–10 minutes, checking frequently after they’ve been in the oven for 5 minutes to avoid burning.
