I’ve cut chicken wings at the joint to make wingettes and drumettes so that they are easier to eat. Sometimes you’ll find them like this in the supermarket, otherwise it’s a quick job at home. The creamy sharpness of the Alabama white sauce perfectly cuts through the rich smokiness of the winglets and wedges.

Ingredients

  • juice of 1 lime
  • 2 tbsp rapeseed oil
  • 2 tbs

Method

Preheat the oven to 180°C (350°F/gas mark 4).

Mix the lime juice, oil, honey, chipotle paste and garlic in a small bowl, then season generously. Put the chicken into a large roasting tin and use your hands to rub them all over with the chipotle mix.
