Saltimbocca literally means ‘to jump in the mouth’. It’s a traditional Italian dish normally made with meat wrapped up in sage and prosciutto. This version is quick and easy to prepare and is packed with so much flavour, you can’t go wrong.

Ingredients

  • 750 g baby new potatoes
  • 2 tbsp rapeseed oil
  • 1 garlic

Method

Preheat the oven to 200°C (400°F/gas mark 6).

Cut the potatoes lengthways into slices 1cm thick and put into a large roasting tin. Add half of the oil and the garlic, then season generously and toss to coat. Spread out into an even layer, then pour over the stock.
