Duck Confit, Potato and Onion Pie

This looks so impressive and the flavour is off the scale thanks to the succulent, delicious duck. I just adore Skeaghanore duck, known as West Cork Confit Duck Legs in the Simply Better Dunnes Stores range. Helena and Eugene Hickey use a white Pekin duck, which has a high meat yield and has surprisingly fewer calories than a chicken breast once you remove the fat, making them just perfect for this recipe.
