These nifty burgers are perfect if you want to double the recipe or get ahead with your prep. However, they can also be made in less than half an hour from store cupboard ingredients, making them a handy standby in your recipe repertoire.
Place the tuna in a bowl with two-thirds of the spring onions and half of the breadcrumbs, 200g of the mayonnaise and half of the Cheddar. Fold in the frozen sweetcorn and the egg yolk and season generously, then mix well to combine. Shape into 4 × 10cm patties.
