This tastes even better when reheated. I like to serve it with coriander, spring onions, avocado, lime wedges and tortillas, but grated cheese and soured cream are also delicious. Try butternut squash or a couple of sweet potatoes instead of the pumpkin depending on what’s available.
Heat the oil in a casserole with a lid over a medium to high heat. Sauté the onions, celery and peppers with a pinch of salt for 8-10 minutes, until softened and starting to caramelise around the edges. Stir in the garlic, spices and oregano and sauté for another 2 minutes, until fragrant.
