This is a clever one-pot pasta that is packed with flavour with just one pan for washing up! It’s the kind of dish you can properly cobble together when the cupboards are looking bare.
Heat the oil in a sauté pan over a high heat. Add the bacon and cook for 2-3 minutes, until crisp and golden. Transfer the bacon to a plate using a slotted spoon, leaving the fat the bacon has released in the pan.
Reduce the heat to medium and sauté the onion and garlic for 3-4 minutes, until softened but not coloured.
Pour in the stock, scraping the bottom of the pan to remove
