Ham hocks are very affordable and give a great ratio of meat. If you have the time, cook them at the weekend to use during the week.
Put the hams hocks in a large pan with the star anise, peppercorns, bay leaves and orange slices, then pour over enough water to cover. Bring to a simmer, then reduce the heat and cover partially with a lid.
