Authentic chicken tikka is traditionally cooked in a tandoor, or clay oven, but I think you can get some good results under the grill or a barbecue would also work well. The cheese is my secret ingredient that adds a pleasant creaminess to the dish. I’ve served it with a dry sweet potato curry that helps to ensure you get plenty of veg.

Ingredients

  • 4 tbsp milk kefir or natural yoghurt
  • 2 garlic cloves, chopped
  • 2.5 cm

Method

Place the kefir or yoghurt in a NutriBullet or small food processor with the garlic, ginger, chillies, cream, oil, cardamom seeds, cumin, nutmeg, Cheddar and half of the butter. Season generously and blitz to a smooth paste. Pour over the chicken and stir to coat. Marinate for at least 1 hour but overnight is even better.
