A traditional cauliflower cheese but served with an excellent addition of a glazed ham. Adding a couple tablespoons of cream to the sauce really does change the flavour and makes it so much more luxurious.
Place the ham in a large pan with the peppercorns and bay leaf, then cover with cold water. Cover with a lid and bring to the boil, then reduce the heat and simmer gently for 30 minutes.
Cut the cauliflower into florets, reserving the small green leaves. Cook in a pan of boiling salted water for 3 minutes, then add the leaves and cook for another 2 minutes. Drain well and tip into a 2-l
