Here is one variety of minced chicken balls which is easily prepared from leftovers and which, rolled into shapes the size of small marbles, makes a good appetizer.
Skin and bone the chicken, and remove any sinews and hard membranes. Mince the flesh, or chop it very finely if a mincer is not available. Remove the crusts from the bread. Soak the slices in a little milk and squeeze dry. In a bowl mix the chicken, bread, egg and seasonings. Knead well and shape into marble-sized balls. Roll them in flour and fry in deep hot oil until cooked and a dark golden
