Prepare the filling.

Prepare the courgettes for stuffing as described. Scoop out their centres from the stem end, using an apple corer, and taking care not to pierce them right through.

Stuff the courgettes tightly with the onion and tomato filling. Lay them in layers side by side in a large pan on a bed of tomato
