Wheat flour tortillas are usually larger than corn tortillas and they come from northern Mexico, where maize does not grow so easily. They are made with plain flour, salt and lard, though butter also gives a good result. Cooked on a hot griddle, they must be very pliable and soft for storage. For most purposes flour tortillas can be used in place of corn tortillas and many people prefer them. They should be treated in the same manner as corn tortillas, though, and never eaten cold.
