These cru nchy, braided, ring-shaped breads are the most famous street food in Turkey. The texture is soft and chewy inside, crunchy but nutty on the first bite. They are sometimes referred to as Turkish bagels in the US.
Sieve the flour into a large mixing bowl, then sprinkle in the yeast and salt. Combine well. Gradually add the water and mix to a dough. Allow to sit for 2–3 minutes, then knead until smooth and elastic, about 5 minutes. Alternatively, use a food mixer with a dough hook. Cover and allow to rise in a warm, draught-free place for 1–1½ hours, until doubled in size.
