Heat 4 tablespoons broken wheat kernels in 1 tablespoon malt extract in a small saucepan. This will caramelize the grains. Add them to 450 g/1 lb/4 cups bread flour (wholewheat, strong or all-purpose flour) plus 1 tablespoon bran.
