For garlic croûtons, add 1 or 2 crushed garlic cloves to the olive oil. The garlic fries with the bread and crusts the croûtons rather pleasantly. I happen to like the taste of fried garlic, but some people do not, so discard the garlic after cooking if you are uncertain.
