  • 75 g/3 oz/¾ cup wholewheat flour
  • 100 g/4 oz/1 cup white unbleached flour
  • ¼ teaspoon sea salt
  • 2 large eggs

    Method

    Sieve the flours and salt into a mound on a clean, dry board and make a well in the centre. Crack in the eggs and mix with a fork, using your free hand to prevent the flour going everywhere. When the eggs have absorbed as much flour as possible, sprinkle with a little water if necessary and knead the dough for 5 minutes. It will be sticky and elastic. Wrap the dough in a damp cloth and refrigerate for 30 minutes. Divide the dough into two pieces and roll out as thinly as possible on a floured surface.
