This is very easy to make at home. The following recipe will make

Ingredients

  • 1 litre/1¾ pints/1 quart milk
  • 1 teaspoon sea salt
  • juice from ½ a lemon

    Method

    1. Heat the milk to boiling boiling point, then add the salt and lemon juice. Simmer for 15 minutes, stirring now and again.

    2. Line a colander or sieve sieve with a double layer of muslin/cheesecloth and place over a large bowl or saucepan. Pour in the milk.

    3. Leave for 1 hour so the whey drains off, leaving the curds behind.
