Method

These are usually made in individual ramekins, covered with a little cream and baked in the oven. Put them on the top rack of the oven, pre-heated to 200°C/400°F/Gas mark 6 for 3-4 minutes. To ensure firm whites and runny yolks I prefer to steam the eggs in ramekins in a large frying pan filled with simmering water, so I can see their progress. This will take about 3-4 minutes.
