Some of the most delicious fruit salads can be made from dried fruits soaked in apple juice. No extra sugar is needed. In this recipe, the fresh eating apples and nuts add crunch and texture. Always use best quality dried fruit.


  • 100 g/4 oz/β…” cup dried apricots
  • 50 g/2 oz dried figs
  • 50 g/2 oz/Β½ cup raisins
  • 80 ml/10 fl oz/1ΒΌ cups apple juice
  • 2 eating apples
  • 50 g/2 oz/Β½ cup flaked/slivered almonds, toasted


    Soak the dried fruits overnight in the apple juice, then cut into bite-sized pieces. Slice the apples thinly and add them to the mixture. Toss well and sprinkle with the almonds.
