Brioches arc easy to make, and are a luxurious breakfast or lunch, being rich in butter and eggs. In their sponge-like texture, they are similar to cold spoon bread and, if they are stuffed, they are particularly enticing.

Ingredients

  • 300 g/10 oz/ cups strong white/all-purpose flour

Method

Mix the flour, butter, salt and cheese together. Add the eggs, milk and yeast and knead for 5 minutes. As the dough is very sticky, it is best done with dough hooks, but if doing it by hand, work quickly to prevent the butter melting and be sure to flour your hands and the work surface.
